so we went camping! it was a really spontaneous decision but well worth it! so it was a really crazy, running around kind of day trying to get things together on friday and i couldn't think of what to have for dinner the first night. so what did i do? called mom, of course! and she said "make something hearty, and cook it at home, put it in a coffee can and you can just heat it right on some coals." my mom is so smart. so i didn't have much to choose from at home but i did have
turkey tenderloins so i searched "turkey stew" at bh&g and saw something with curry. a ha! tom loves curry! so i set off in search of ingredients that could be used in a turkey curry. and i found plenty! here's my recipe for camp turkey curry...
turkey tenderloins so i searched "turkey stew" at bh&g and saw something with curry. a ha! tom loves curry! so i set off in search of ingredients that could be used in a turkey curry. and i found plenty! here's my recipe for camp turkey curry...onion chopped
minced garlic
carrots
saute in a pan
zucchini, added to pan
move to a pot of v8, chickpeas and chicken broth
chop a turkey tenderloin and saute with hot curry
add to pot
add some ginger, lime juice, salt, pepper, and fresh cilantro
add some ginger, lime juice, salt, pepper, and fresh cilantro
i think that was it. it was really good though! and it was fast and easy too! 10/10 if i do say so myself.
and of course we had smores for dessert! mmm... delish!
mornings were filled with tasty homemade oatmeal (which tara called gruel!) and that delish brew, coffee.

and of course, what's camping without franks n beans? well, we liked it anyway. and a cheap ($7) tasty bottle of wine to complement the chared dogs. camping is yummy! keep eating...
