lasagne and roll-ups 5/5!

so here we are again, "entertaining". alli came over with some terrible wine (due to no fault of her own) and a fabulous little appetizer that she put together. this was paired with tom's (or his mom's) famous lasagne, which turned out amazing, as usual. dessert was a compilation of ben n jerry's and some left over reception cake from a few nights ago. overall a fabulous and easy dinner for a group.





alli's sweet-ass crescent roll-ups

1 pkg pillsbury crescent rolls (the ones in the can in the fridge section of the grocery store)
some basil pesto
some crumbled feta cheese


lay the dough triangles out and put a small spoonful of feta and pesto on each, at the wider end (or base) of the triangle. gently roll up each and shape into a gentle crescent or c-shape on an ungreased pan. bake at 350F for 12-15 min or until puffy and golden. mmm mmm good!


tom's (mom's) lasagne

1 tub cottage cheese
4c grated mozzerella cheese
2 jars pasta sauce
1 box no-boil wheat lasagne noodles
2# lean ground beef, browned and mixed with sauce
1 egg
oregano
s&p


mix cottage cheese with the egg and add some oregano to taste. place a little sauce in the bottom of a 9x13 baking dish and top with one layer of lasagne noodles, meat w/ sauce, then cottage cheese mix, and finally, some moz chz. continue layering until top layer finishes off the noodles. top last of noodles with some more sauce and the rest of the moz. bake, covered with foil, for 45m at 350F, then remove foil and bake another 15-20m followed by a quick broil if you like your cheese nicely browned. let it set up AT LEAST 20min but more is always better for a nice, stay-together piece of yummy goodness.


and that's it! the lasagne can be put together ahead of time and baked later (just cook a little longer if it's coming straight from the fridge). try it! you'll like it! keep eating...
